The concept of a "multi-function table" appeals to me in terms of the ability to use bench dogs as locator pins, work holding, and pass throughs for clamps.
A tool for making the bench dogs on any table surface is the UJK Parf MkII
Mobility
Use leveling casters to be able to make the bench immobile and level, like the Foot Master series of casters.
